Roasted Fennel & Onions with Chive Flowers

Step 1. ,
Get a large, heavy bottom, shallow pot hot and combine oil, garlic, rosemary, bay and chili in it. Allow to sweat for 4 minutes, lightly season with salt.

Add fennel and stir often, turn the heat down to medium and lightly season with salt, fennel should cook for 1 hour.

If ingredients stick to the bottom of the pan use the water to deglaze and continue to cook.

Once fennel is cooked remove from pan and taste, add the desired amount of salt, black pepper and finish with a touch of fresh olive oil and sherry vinegar.

Garnish the plate with the chive flowers.

ingredients
1 cup grapeseed oil ,
1 head garlic, pealed and crushed ,
2 each onions, chopped ,
1 bunch rosemary ,
5 bulbs fennel, cut into 1/6ths ,
1 Tbs salt 1 ,
1 each bay leaf,
1 each chili de arbol ,
1 cup water, this can be substituted with wine ,
1/8th tsp black pepper, ground,
2 oz fresh olive oil ,
1 oz sherry venegar ,
1 tsp salt,
1 bunch chives with flowers removed ,
